I love brie, and so I started looking online for inspiration for a chicken dish. I came up with this last night and it was awesome! I don't really keep measurements, so please bear with me.

Pear, Onion & Brie Chicken
White cooking wine
Cracked black pepper
1 chopped pear (I used Bartlet)
1/2 chopped yellow onion
Brie (Didn't need the entire wheel)
4 chicken cutlets
- Preheat oven to 350°
- Sear the chicken cutlets in a pan with olive oil. Then place in a baking dish. Bake chicken for 15 minutes.
- In the same pan where you seared the chicken, drizzle more olive oil to make sure pan is coated and sautee the onions and pears until the onions are translucent. Add cracked black pepper to taste. Then add just enough white cooking wine to de-glaze the pan.
- Take chicken out of the over and pour the pear & onion mixture over chicken cutlets. bake for another 15 minutes.
- Take the chicken out once again and place slices of brie over the chicken and out back in the over under the broiler until cheese is melted.
Voilá! It's so easy, but still grown up and a bit fancy! Next time I may add cherries to the pears and onions.
